I have had these pork tacos on my list to make for weeks and finally remembered to put it in the crockpot early enough to actually eat them for dinner. My family LOVED them and they couldn't be easier.  Callie at 2 and Lleyton tried to eat most of the pineapple on the side, but finished his with a smile, too. 

What's funny is that I made these on a Monday so my kids were alllll confused and thought it was Tuesday. They take Taco Tuesday pretty seriously! 

The original recipe is here with all of the ingredients I could have used, but this is how I modified. 

  1. I put a plain (still frozen) pork tenderloin in the crockpot on high for 3-4 hours. If you use a thawed one, it won't take as long or put it on low. 
  2. I shredded it with a tongs and poured in a 16 oz jar of salsa verde (Archer Farms from Target. Nice flavor, not too spicy) to warm up.
  3. Turned crockpot to low for an hour
  4. Dished up the meat with lettuce, whole wheat tortillas, and a can of pineapple tidbits (drained - saved the juice for smoothies or mocktail!) 
That's IT! My family shredded some cheese and used hard shell tacos. 

If it wasn't for my kids, I probably would have made the pineapple salsa as written, but it was delicious and easier this way. It's definitely going on the menu again!
